Crispy Parmesan Potatoes Recipe

Ingredients

  • ~1.5 lb / ~700 g baby potatoes (e.g. Yukon Gold) (Yay! For Food)
  • 3–4 tbsp olive oil (Dishing Delish)
  • ½ cup (or more) freshly grated Parmesan cheese (Hungry Huy)
  • 1 tsp garlic powder (or 3–4 garlic cloves, minced) (Dishing Delish)

Instructions

  1. Prep
    • Preheat the oven to 400°F (200°C). (Hungry Huy)
    • Wash the potatoes. If they’re big, cut into bite‑sized pieces; if small (baby), you can halve them. (Dishing Delish)
    • (Optional) Soak the cut potatoes in water for ~15 minutes to remove some starch, then dry them thoroughly. (Dishing Delish)
  2. Season
    • In a large bowl, toss the potatoes with olive oil, garlic powder (or minced garlic), onion powder (if using), thyme or oregano, salt, and pepper. (Dishing Delish)

  3. Bake
    • Spread the potatoes in a single layer on a baking sheet. Don’t overcrowd them — they crisp better when they have space. (Jo Cooks)
