🥔 Crispy Oven-Baked Wedges

Ingredients

  • 4 medium potatoes (or sweet potatoes)
  • 2–3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika (smoked paprika optional)
  • ½ tsp black pepper
  • ½ tsp salt (or to taste)
  • Optional: ½ tsp chili flakes, 1 tsp dried herbs (rosemary, thyme, or oregano)

Instructions

  1. Preheat oven to 220°C (425°F).
  2. Cut potatoes into wedges (or sticks for “fries”).
  3. Soak potato pieces in cold water for 20–30 minutes → helps remove starch and makes them crispier.
  4. Drain and pat dry with a towel.
  5. Toss potatoes in olive oil, garlic powder, paprika, salt, pepper, and any optional herbs.
  6. Arrange in a single layer on a baking tray lined with parchment paper.
  7. Bake for 25–30 minutes, flipping halfway, until golden and crispy.
  8. Serve hot with ketchup, aioli, or yogurt dip.

🍠 Variations

  • Sweet Potato Wedges: Use sweet potatoes, add cinnamon or smoked paprika for flavor.
  • Zucchini Fries: Coat in olive oil and breadcrumbs, bake until golden.
  • Carrot Fries: Slice carrots thin, season with cumin or smoked paprika, and bake.
