🍄 Creamy Mushroom Soup (Easy & Delicious)

This classic soup is rich, comforting, and perfect for a cozy meal.

🧾 Ingredients

  • 2 tbsp butter
  • 1 tbsp olive oil (optional)
  • 1 small onion, finely chopped
  • 3–4 garlic cloves, minced
  • 300–400 g mushrooms (button or cremini), sliced
  • 2 tbsp flour
  • 3 cups chicken or vegetable broth
  • 1 cup cream or milk
  • Salt and black pepper (to taste)
  • ½ tsp thyme (optional)
  • Fresh parsley for garnish (optional)

👩‍🍳 Instructions

  1. Sauté the base
    Heat butter and olive oil in a pot over medium heat. Add onion and cook for 3–4 minutes until soft.
  2. Add garlic & mushrooms
    Stir in garlic and sliced mushrooms. Cook 6–8 minutes until mushrooms release their moisture and become golden.
  3. Add flour
    Sprinkle flour over the mushrooms and stir well. Cook for about 1 minute to remove the raw flour taste.
  4. Add broth
    Slowly pour in the broth while stirring to avoid lumps. Bring to a gentle simmer.
  5. Simmer
    Cook for 10–15 minutes so the flavors combine.
  6. Add cream
    Stir in the cream or milk. Season with salt, pepper, and thyme.
  7. Blend (optional)
    For a smoother soup, blend half or all of the soup with a hand blender.
  8. Serve
    Garnish with fresh parsley and serve hot with toasted bread.

  • Add grated cheese for extra richness.
  • A splash of lemon juice brightens the flavor.
  • Use mixed mushrooms for a deeper taste.
