Here’s a delicious recipe for Creamy Mushroom Chicken:

Ingredients:

  • 4 boneless, skinless chicken breasts (or thighs, if you prefer)
  • 2 tbsp olive oil or butter (for searing)
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 8 oz (225g) cremini or button mushrooms, sliced (or a mix of wild mushrooms for more flavor)
  • 1 cup heavy cream (or half-and-half for a lighter version)
  • 1/2 cup chicken broth (or white wine for extra depth of flavor)
  • 1 tbsp Dijon mustard (optional, for a slight tang)
  • 1/2 tsp dried thyme (or 1 tsp fresh thyme, finely chopped)
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • 1/4 cup grated Parmesan cheese (optional, for extra richness)
  • 1 tbsp lemon juice (optional, for brightening up the sauce)

Instructions:

1. Prepare the Chicken:

  • Season the chicken breasts with salt and pepper on both sides.
  • Heat 1 tablespoon of olive oil or butter in a large skillet over medium-high heat.
  • Add the chicken breasts to the skillet and sear them for 5-7 minutes on each side, until golden brown and cooked through (internal temperature should reach 165°F or 75°C). If the chicken breasts are very thick, you can pound them to an even thickness or finish cooking them in the oven at 375°F (190°C) for 10-15 minutes after searing.
  • Once cooked, remove the chicken from the skillet and set it aside on a plate.

2. Make the Mushroom Sauce:

  • In the same skillet, add the remaining tablespoon of olive oil or butter. Add the chopped onion and sauté for 2-3 minutes until softened.
  • Add the garlic and cook for another 30 seconds until fragrant.
  • Add the sliced mushrooms to the skillet and cook, stirring occasionally, for 5-7 minutes until the mushrooms release their liquid and become golden brown.

3. Add the Liquid:

  • Pour in the chicken broth (or white wine) to deglaze the pan, scraping up any brown bits stuck to the bottom of the skillet. This adds flavor to the sauce.
  • Stir in the heavy cream, Dijon mustard (if using), and thyme. Bring the sauce to a simmer and cook for 5-7 minutes, or until the sauce has thickened slightly.

4. Finish the Sauce:

  • Taste the sauce and adjust the seasoning with salt and pepper if needed.
  • For extra richness, stir in the Parmesan cheese and let it melt into the sauce.
  • If you like a bit of brightness in the sauce, add a teaspoon of lemon juice to balance out the richness.

5. Combine Chicken and Sauce:

  • Return the cooked chicken breasts to the skillet and spoon some of the mushroom sauce over the top.
  • Simmer the chicken in the sauce for 2-3 minutes to heat through, ensuring the chicken is coated with the creamy sauce.

6. Serve:

  • Garnish with fresh parsley and serve the creamy mushroom chicken over rice, pasta, or mashed potatoes.
  • You can also serve it with a side of sautéed vegetables like spinach, green beans, or roasted asparagus.

Tips:

  • Chicken Thighs: If you prefer chicken thighs, you can use bone-in, skinless thighs for added flavor and juiciness. Just adjust the cooking time accordingly.
  • Make It Lighter: You can substitute the heavy cream with half-and-half or whole milk for a lighter sauce, but the richness will be slightly reduced. For an even lighter option, you could use Greek yogurt or a bit of cream cheese to thicken the sauce.
  • Mushroom Variations: Feel free to mix different types of mushrooms like shiitake, portobello, or oyster mushrooms for a deeper, more complex flavor.
  • Add Fresh Herbs: For added flavor, you can incorporate fresh herbs like rosemary, basil, or tarragon along with the thyme.
