Creamy chicken and carrot spread

Here’s a simple and delicious Creamy Chicken and Carrot Spread recipe—perfect for sandwiches, crackers, or as a dip.


Ingredients (makes about 2 cups)

  • 1 cup cooked chicken, shredded or finely chopped

  • 1/2 cup cooked carrots, mashed or finely grated

  • 1/2 cup cream cheese, softened

  • 2 tablespoons mayonnaise (optional, for extra creaminess)

  • 1 teaspoon Dijon mustard (optional, for flavor)

  • Salt and black pepper, to taste

  • 1/2 teaspoon garlic powder (optional)

  • 1–2 tablespoons chopped fresh parsley or chives (optional, for garnish)


Instructions

  1. Prepare the ingredients:

    • Cook and mash or grate the carrots.

    • Shred or finely chop the cooked chicken.

  2. Mix the spread:

    • In a medium bowl, combine chicken, carrots, cream cheese, mayonnaise, and Dijon mustard (if using).

    • Mix until smooth and creamy.

  3. Season:

    • Add salt, pepper, and garlic powder to taste. Mix well.

  4. Chill (optional):

    • Cover and refrigerate for 30 minutes to let flavors meld.

  5. Serve:

    • Spread on bread, crackers, or use as a dip for veggies. Garnish with fresh parsley or chives.


✅ Tips:

  • For extra texture, leave some carrot pieces chunky instead of fully mashing.

  • You can add a teaspoon of lemon juice for brightness.

  • Leftovers can be stored in an airtight container in the fridge for up to 3 days.
