Cowboy meatloaf and potato casserole

Here’s a hearty, comforting meal idea: Cowboy Meatloaf and Potato Casserole. This combines a savory, flavorful meatloaf with creamy, cheesy potatoes.


Cowboy Meatloaf

Ingredients (serves 4–6)

  • 1½ lbs (700g) ground beef (or beef/pork mix)
  • 1 cup breadcrumbs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/3 cup milk
  • 2 eggs
  • ½ cup BBQ sauce (plus extra for topping)
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp smoked paprika (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix all ingredients (except extra BBQ sauce) until just combined.
  3. Shape into a loaf and place in a greased baking dish.
  4. Spread BBQ sauce over the top.
  5. Bake 50–60 minutes, until internal temperature reaches 160°F (71°C).
  6. Let rest 5–10 minutes before slicing.

Potato Casserole

Ingredients

  • 4 cups peeled and diced potatoes
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream
  • ½ cup milk
  • 2 tbsp butter
  • Salt and pepper, to taste
  • Optional: ½ cup cooked bacon bits or green onions

Instructions

  1. Preheat oven to 350°F (175°C) if not already heated.
  2. Boil diced potatoes until just tender, about 10–12 minutes, then drain.
  3. Mash slightly with butter, sour cream, milk, salt, and pepper.
  4. Stir in half of the cheese (and optional bacon/green onions).
  5. Spread into a greased casserole dish and top with remaining cheese.
  6. Bake 20–25 minutes until golden and bubbly.

💡 Tips for a Cowboy-style meal

  • Serve meatloaf slices over a scoop of potato casserole for a true comfort-food combo.
  • You can add sautéed bell peppers and onions to the meatloaf mixture for extra flavor.
  • Use smoked cheddar or add a few dashes of hot sauce to the potato casserole for a “cowboy kick.”
