Cornmeal cake

Here’s a simple, old-fashioned Cornmeal Cake—moist, lightly sweet, and perfect with coffee or tea 🌽🍰


🌽 Cornmeal Cake

Ingredients (makes 1 9-inch cake or 8×8 pan)

  • 1 cup all-purpose flour
  • 1 cup yellow cornmeal
  • 1 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 large eggs
  • 1 cup milk or buttermilk
  • 1/2 cup vegetable oil or melted butter
  • 1 tsp vanilla extract
  • Optional: lemon zest or cinnamon for flavor

Instructions

  1. Preheat oven
    • Preheat to 350°F (175°C).
    • Grease and flour your baking pan.
  2. Mix dry ingredients
    • In a large bowl, whisk flour, cornmeal, sugar, baking powder, baking soda, and salt.
  3. Mix wet ingredients
    • In another bowl, beat eggs, milk, oil (or butter), and vanilla.
  4. Combine
    • Pour wet ingredients into dry ingredients.
    • Stir just until combined (don’t overmix).
  5. Bake
    • Pour batter into prepared pan.
    • Bake 35–40 minutes, until golden and a toothpick comes out clean.
  6. Cool & serve
    • Let cool slightly before slicing.
    • Serve plain or with honey, powdered sugar, or fresh fruit.

Tips

  • Buttermilk gives a softer, more tender crumb.
  • For a rustic touch, sprinkle coarse sugar on top before baking.
  • Delicious served warm with butter or a drizzle of honey.
