Ingredients:

  • 1 can (15 oz) whole kernel corn, drained
  • 1 package (8.5 oz) Jiffy cornbread mix (or your favorite cornbread mix)
  • 1 cup sour cream
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1/4 cup sugar (optional, depending on how sweet you want it)
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup shredded cheddar cheese (optional, for a cheesy version)

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C).
  • Grease a 9×9-inch or 9×13-inch baking dish with butter or cooking spray.

2. Mix the Ingredients:

  • In a large bowl, combine the creamed corn, drained whole kernel corn, cornbread mix, sour cream, melted butter, sugar (if using), salt, and pepper. Stir everything together until well mixed.
  • If you’re making a cheesy version, fold in the shredded cheddar cheese at this stage.

3. Bake the Casserole:

  • Pour the corn mixture into the prepared baking dish and spread it out evenly.
  • Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean. The casserole should have a slightly firm texture but still be creamy inside.

4. Serve:

  • Let the casserole rest for a few minutes before serving. This will allow the texture to set and make it easier to cut into squares.
  • Serve as a side dish with your favorite meats or other casseroles.

Tips:

  • Cheese: Adding cheese to the casserole makes it extra rich and savory. Cheddar is a popular choice, but you can experiment with other cheeses like Monterey Jack or even a blend of cheeses.
  • Make it Spicy: If you like a little heat, you can add diced green chilies, jalapeños, or a pinch of cayenne pepper to the mix for a spicy kick.
  • Add Bacon: Crumbled bacon makes a great topping for corn casserole, giving it a smoky flavor.
  • Make Ahead: You can prepare the casserole the night before and store it in the fridge. Just cover it tightly with plastic wrap or aluminum foil. Bake it the next day, adding a few extra minutes of cook time if needed.
