Ingredients (Serves 2–4)

  • 4 pork chops (bone-in or boneless, about 1-inch thick)
  • Salt and black pepper, to taste
  • 2 tbsp olive oil or butter
  • 2 cloves garlic, minced
  • 1 tsp dried thyme or rosemary (optional)
  • ½ cup (120 ml) chicken broth or water
  • Lemon wedges (optional, for serving)

Instructions

  1. Prepare the pork chops:
    • Pat pork chops dry with paper towels.
    • Season generously with salt, pepper, and optional herbs.
  2. Sear the pork chops:
    • Heat olive oil or butter in a skillet over medium-high heat.
    • Add pork chops and sear 3–4 minutes per side until golden brown.
  3. Add flavor and moisture:
    • Reduce heat to medium. Add garlic and cook 30 seconds until fragrant.
    • Pour in chicken broth (or water) to keep chops moist.
  4. Finish cooking:
    • Cover the skillet and simmer 5–10 minutes until internal temperature reaches 145°F (63°C).
    • Remove pork chops from skillet and let rest 3–5 minutes.
  5. Serve:
    • Spoon pan juices over pork chops.
    • Optional: Serve with lemon wedges for extra brightness.

Tips for Juicy Pork Chops

  • Don’t overcook: Pork is safe at 145°F (63°C), and resting allows juices to redistribute.
  • Bone-in vs. boneless: Bone-in chops stay juicier during cooking.
  • Optional extras: Sauté mushrooms or onions in the pan for a quick sauce.
