Clodhoppers

Ah! You mean Clodhoppers—those delicious, crunchy, melt-in-your-mouth chocolatey treats. They’re like a cross between a cookie and a candy, usually made with crushed graham crackers or cereal, coated in chocolate. Here’s a homemade, no-bake version that’s easy to make:


No-Bake Homemade Clodhoppers

Ingredients:

  • 3 cups crispy rice cereal or graham cracker crumbs

  • 1 cup chocolate chips (milk, semi-sweet, or dark)

  • ½ cup peanut butter (or any nut butter)

  • ¼ cup honey or corn syrup

  • 1 teaspoon vanilla extract

  • Pinch of salt

  • Optional: powdered sugar for extra coating


Instructions:

  1. Line a tray
    Line a baking sheet or tray with parchment paper.

  2. Melt chocolate mixture
    In a medium saucepan over low heat, combine the chocolate chips, peanut butter, and honey. Stir until smooth. Remove from heat and stir in vanilla and salt.

  3. Mix in the cereal or crumbs
    Fold in the rice cereal or graham cracker crumbs until fully coated. The mixture should be thick and sticky.

  4. Form the clodhoppers
    Use a spoon to scoop small clusters and drop them onto the prepared tray. Press gently to shape if needed.

  5. Optional coating
    Roll each cluster lightly in powdered sugar for that classic “clodhopper” look.

  6. Chill
    Refrigerate for at least 1 hour until firm.

  7. Enjoy!
    Store in an airtight container in the fridge.


These are crunchy, chocolatey, and addictively bite-sized—just like the original Clodhoppers!
