Cinnamon Roll Bliss Bars taste like the center of a cinnamon roll—soft, gooey, and topped with sweet cream cheese glaze—without all the rolling and rising.


Cinnamon Roll Bliss Bars

Ingredients

Bars

  • 2½ cups all-purpose flour
  • 1 cup brown sugar
  • ½ cup granulated sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp cinnamon
  • ¼ tsp salt
  • ¾ cup unsalted butter, melted
  • 2 large eggs
  • 1 tsp vanilla extract

Cinnamon Swirl

  • ½ cup butter, softened
  • ¾ cup brown sugar
  • 1½ tbsp cinnamon

Cream Cheese Glaze

  • 4 oz cream cheese, softened
  • 2 tbsp butter, softened
  • 1 cup powdered sugar
  • 1–2 tbsp milk or cream
  • ½ tsp vanilla

Instructions

  1. Prep
    • Preheat oven to 350°F (175°C).
    • Line a 9×13 pan with parchment.
  2. Make the Bar Base
    • Whisk dry ingredients.
    • Mix melted butter, eggs, and vanilla.
    • Combine wet and dry until just mixed.
    • Spread batter evenly in pan.
  3. Cinnamon Swirl
    • Mix swirl ingredients until smooth.
    • Drop spoonfuls over batter and swirl gently with a knife.
  4. Bake
    • Bake 22–28 minutes, until edges are set and center is slightly soft.
  5. Glaze
    • Beat cream cheese and butter until smooth.
    • Add powdered sugar, vanilla, and milk until pourable.
    • Spread or drizzle over warm bars.
  6. Cool & Slice
    • Let cool slightly for gooey bars or fully for clean cuts.

Tips for Extra Bliss

  • Add chopped pecans or walnuts to the swirl
  • Use brown butter for deeper flavor
  • Sprinkle a little flaky salt on top
  • Slightly underbake for that cinnamon-roll-center texture
