Ingredients (serves 2-4)

For the shrimp:

  • 1 lb (450 g) shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp chili powder (optional, for a bit of spice)
  • Salt and pepper, to taste
  • Juice of 1 lime

For the salad:

  • 4 cups mixed greens (lettuce, spinach, arugula)
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup corn (fresh, frozen, or canned)

For the dressing:

  • Juice of 1 lime
  • 2 tbsp olive oil
  • 1 tsp honey or agave syrup
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Cook the shrimp:
    • Heat olive oil in a skillet over medium-high heat.
    • Add garlic and shrimp. Season with chili powder, salt, and pepper.
    • Cook for 2-3 minutes per side until shrimp turn pink and opaque.
    • Squeeze lime juice over the shrimp and set aside.
  2. Make the dressing:
    • Whisk together lime juice, olive oil, honey, salt, and pepper in a small bowl.
  3. Assemble the salad:
    • In a large bowl, combine greens, cherry tomatoes, red onion, avocado, corn, and cilantro.
    • Top with cooked shrimp.
    • Drizzle the dressing over the salad and toss gently.
  4. Serve immediately:
    • Garnish with extra lime wedges or cilantro if desired.

  • For extra crunch, add tortilla strips or roasted pumpkin seeds.
  • You can swap shrimp for grilled chicken or tofu if you prefer.
