Here’s a straightforward recipe for chow mein, a classic stir-fried noodle dish that’s flavorful, quick, and customizable:


Vegetable & Chicken Chow Mein Recipe (Serves 2–3)

Ingredients:

  • 6 oz (170 g) chow mein noodles or thin egg noodles
  • 1 chicken breast, thinly sliced (or tofu for vegetarian)
  • 1 cup shredded cabbage
  • ½ cup carrot, julienned
  • ½ cup bell pepper, sliced thin
  • 2–3 green onions, sliced
  • 2 cloves garlic, minced
  • 2 tsp ginger, minced
  • 2–3 tbsp soy sauce
  • 1 tbsp oyster sauce (optional)
  • 1 tsp sesame oil
  • 1–2 tbsp vegetable oil for stir-frying
  • Salt and pepper to taste

Instructions:

  1. Cook noodles:
    • Boil noodles according to package instructions, drain, and set aside.
  2. Cook protein:
    • Heat 1 tbsp vegetable oil in a skillet or wok over medium-high heat.
    • Add chicken slices and cook until browned and cooked through. Remove and set aside.
  3. Stir-fry vegetables:
    • Add another tbsp of oil to the wok.
    • Stir-fry garlic and ginger for 30 seconds until fragrant.
    • Add carrots, bell peppers, and cabbage; cook 2–3 minutes until slightly tender but still crisp.
  4. Combine everything:
    • Return chicken to the wok.
    • Add cooked noodles.
    • Pour in soy sauce, oyster sauce, and sesame oil. Toss everything together for 2–3 minutes until heated and well-coated.
  5. Garnish and serve:
    • Top with green onions and a sprinkle of sesame seeds if desired. Serve hot.

💡 Tips:

  • For extra flavor, add a dash of chili sauce or Sriracha.
  • Swap chicken for shrimp, beef, or tofu.
  • Keep vegetables slightly crisp—they continue cooking after serving, giving the dish a nice texture.
