Here’s a quick breakdown of some popular styles and dishes from Chinese cuisine, along with a few recipes you might want to try at home!

  1. Cantonese (Southern China)

    A classic Sichuan dish featuring tender chicken, peanuts, and vegetables, all coated in a flavorful, spicy sauce.

    Ingredients:

    • 1 lb chicken breast, diced
    • 1/2 cup roasted peanuts
    • 2 tbsp soy sauce
    • 2 tbsp rice vinegar
    • 1 tbsp sugar
    • 1 tbsp cornstarch (for thickening)
    • 2-3 dried red chilies
    • 1/2 tsp Sichuan peppercorns (optional for the numbing effect)
    • 1 green bell pepper, diced
    • 2 cloves garlic, minced
    • 1 tbsp ginger, minced
    • 2 tbsp vegetable oil

    Instructions:

    1. In a small bowl, mix soy sauce, rice vinegar, sugar, and cornstarch to create the sauce.
    2. Heat vegetable oil in a wok or large pan. Add dried chilies and Sichuan peppercorns, cooking until fragrant.
    3. Add chicken pieces to the pan and cook until browned.
    4. Toss in the bell pepper, garlic, and ginger, and cook for another 2-3 minutes.
    5. Pour in the sauce and stir everything until thickened and coated.
    6. Toss in the peanuts at the end and give everything one final stir before serving.
  2. Mapo Tofu (麻婆豆腐)
    A fiery and savory dish from Sichuan cuisine that combines tofu, ground pork, and a spicy, flavorful sauce.

    Ingredients:

    • 1 lb soft tofu, cubed
    • 1/2 lb ground pork or beef
    • 2 tbsp vegetable oil
    • 3 tbsp doubanjiang (fermented bean paste)
    • 1 tbsp soy sauce
    • 1 tbsp rice wine or Shaoxing wine
    • 1 tsp sugar
    • 2 cloves garlic, minced
    • 1-inch piece of ginger, minced
    • 1/2 cup chicken stock or water
    • 1 tbsp cornstarch (optional, to thicken sauce)
    • Sichuan peppercorns (optional, for numbing effect)
    • Green onions, chopped (for garnish)

    Instructions:

    1. Heat oil in a pan or wok, and cook the ground pork until browned.
    2. Add garlic and ginger, cooking until fragrant.
    3. Stir in the doubanjiang (fermented bean paste), soy sauce, rice wine, sugar, and stock, letting the sauce simmer for a few minutes.
    4. Add tofu to the sauce and gently stir to coat. Simmer for another 5-10 minutes to let the flavors meld.
    5. If you want a thicker sauce, mix cornstarch with a little water and stir it in.
    6. Garnish with Sichuan peppercorns and green onions before serving.
  3. Xiao Long Bao (小笼包)
    These delicious soup dumplings are filled with pork and a rich, flavorful broth that bursts when you bite into them.

    Ingredients:

    • Dumpling wrappers (store-bought or homemade)
    • 1 lb ground pork
    • 2 tbsp soy sauce
    • 1 tbsp ginger, minced
    • 1/2 cup chicken broth (preferably gelatinized)
    • 2 tsp sugar
    • 1/2 tsp white pepper
    • 1 tbsp Shaoxing wine
    • 1 tbsp sesame oil

    Instructions:

    1. Combine the ground pork, soy sauce, ginger, Shaoxing wine, sesame oil, and sugar in a bowl.
    2. Heat the chicken broth until gelatinized, then mix it into the pork mixture (this is what creates the “soup” inside the dumplings).
    3. Roll out the dumpling wrappers and fill with a spoonful of the pork mixture.
    4. Carefully fold the wrapper around the filling, pleating the edges to create a sealed dumpling.
    5. Steam the dumplings for about 8-10 minutes, until the wrappers are translucent and the filling is cooked through.
    6. Serve with a dipping sauce of soy sauce, vinegar, and ginger.

  • Wok: If you can, get a wok. It’s a versatile tool for stir-frying, steaming, and even deep frying.
