Here’s a flavorful recipe for chicken thighs in a savory sauce—perfect for a comforting dinner:


Savory Chicken Thighs

Ingredients (serves 4):

  • 4–6 bone-in, skin-on chicken thighs
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • ½ cup heavy cream or coconut milk
  • 2 tsp Dijon mustard (optional)
  • 1 tsp dried thyme or 1 tbsp fresh thyme
  • 1 tsp paprika
  • Optional: chopped parsley for garnish

Instructions

  1. Season and sear chicken:
    • Pat chicken dry, season with salt, pepper, and paprika.
    • Heat olive oil in a skillet over medium-high heat.
    • Sear chicken thighs skin-side down until golden (5–7 minutes), then flip and cook 3–4 minutes. Remove and set aside.
  2. Sauté aromatics:
    • In the same skillet, add onions and garlic. Cook until soft and fragrant (~3 minutes).
  3. Make the sauce:
    • Add chicken broth, cream, Dijon mustard, and thyme. Stir to combine and bring to a gentle simmer.
  4. Cook chicken in sauce:
    • Return chicken to the skillet, skin-side up. Cover and simmer on low for 20–25 minutes, until chicken is cooked through (internal temp 165°F / 74°C).
  5. Finish and serve:
    • Remove chicken, stir sauce, and adjust seasoning.
    • Serve chicken with sauce spooned over top, garnished with parsley.

💡 Tips:

  • For a thicker sauce, remove chicken once cooked and simmer the sauce 3–5 minutes until slightly reduced.
  • Serve with mashed potatoes, rice, or roasted vegetables for a complete meal.
  • Swap thyme for rosemary or sage for a different flavor profile.
