Here’s a simple and delicious recipe for Chicken Salad Croissants—perfect for a light lunch or brunch:


Chicken Salad Croissants

Ingredients (serves 4)

  • 2 cups cooked chicken, shredded or diced (rotisserie chicken works great)
  • 1/2 cup mayonnaise (or Greek yogurt for a lighter version)
  • 1 tsp Dijon mustard
  • 1/4 cup celery, finely chopped
  • 1/4 cup red grapes, halved (optional for sweetness)
  • 1/4 cup slivered almonds or chopped pecans (optional)
  • Salt and black pepper, to taste
  • 4 croissants, sliced in half
  • Lettuce leaves (optional)

Instructions

  1. Prepare the chicken salad
    • In a medium bowl, combine chicken, mayonnaise, Dijon mustard, celery, grapes, and nuts.
    • Season with salt and pepper to taste.
  2. Assemble croissants
    • Slice croissants in half horizontally.
    • Place a lettuce leaf on the bottom half if desired.
    • Spoon chicken salad over the lettuce and top with the croissant top.
  3. Serve
    • Serve immediately or refrigerate until ready to eat.

Tips

  • Make ahead: Chicken salad can be prepared a day in advance and stored in the fridge.
  • Add-ins: Chopped apples, dried cranberries, or fresh herbs like dill or parsley.
  • Variation: Toast the croissants lightly for extra texture.
