Instructions:

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish with butter.
  2. Prepare the chicken: If you’re using rotisserie chicken or any leftover chicken, just shred it into bite-sized pieces. If you’re cooking fresh chicken, bake, boil, or pan-fry it, then chop into chunks.
  3. Make the creamy filling: In a large mixing bowl, combine the cooked chicken, cream of chicken soup, sour cream, milk, garlic powder, onion powder, thyme (if using), and a pinch of salt and pepper. Stir everything together until it’s smooth and well combined.
  4. Assemble the casserole: Cut the biscuit dough into quarters. Layer the biscuit pieces on top of the chicken mixture in the greased baking dish. They don’t need to cover every spot perfectly—just scatter them evenly over the filling.
