Chicken and potato bake

Here’s a hearty, comforting Chicken and Potato Bake 🍗🥔 — easy, family-friendly, and perfect for weeknights.


🥘 Chicken & Potato Bake (Serves 4–6)

🛒 Ingredients

  • 4 boneless, skinless chicken breasts (or thighs)
  • 4–5 medium potatoes, peeled and cubed
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp dried thyme or Italian seasoning
  • ½ tsp onion powder
  • Salt & black pepper to taste
  • ½ cup chicken broth
  • 1 cup shredded mozzarella or cheddar (optional)
  • Fresh parsley (for garnish)

👩‍🍳 Instructions

1️⃣ Preheat

Preheat oven to 400°F (200°C).
Lightly grease a 9×13-inch baking dish.


2️⃣ Season Potatoes

In a large bowl, toss potatoes with:

  • 2 tbsp olive oil
  • Half the garlic
  • Paprika, thyme, salt & pepper

Spread evenly in baking dish.


3️⃣ Add Chicken

Rub chicken with remaining olive oil, garlic, onion powder, salt & pepper.
Place on top of potatoes.


4️⃣ Add Liquid

Pour ½ cup chicken broth around (not over) the chicken to keep everything moist.


5️⃣ Bake

Bake uncovered for 35–45 minutes, or until:

  • Chicken reaches 165°F (74°C)
  • Potatoes are fork-tender

6️⃣ Optional Cheese Finish

Sprinkle cheese over top during last 5 minutes and bake until melted.


🌿 Optional Add-Ins

  • Broccoli or green beans
  • Sliced bell peppers
  • Cream sauce instead of broth (½ cup cream + ¼ cup Parmesan)
  • Lemon slices for brightness

💡 Tips

  • Cut potatoes evenly for consistent cooking.
  • If using bone-in chicken, increase bake time by 10–15 minutes.
  • For crispier potatoes, broil for 2–3 minutes at the end.
