Perfect comfort food choice! 😋 Chicken and Potato Bake is hearty, creamy, and flavorful — a full meal baked in one dish. You can make it simple and rustic, or rich and cheesy depending on your mood. Here’s a classic, creamy version that’s always a hit:


🍗🥔 Creamy Chicken and Potato Bake

Ingredients (Serves 4–6)

  • 2 lbs (900 g) potatoes, peeled and thinly sliced

  • 1 lb (450 g) boneless chicken breasts or thighs, cut into bite-sized pieces

  • 1 medium onion, sliced

  • 2 cloves garlic, minced

  • 1 cup (240 ml) heavy cream or half-and-half

  • ½ cup (120 ml) chicken broth

  • 1 cup (100 g) shredded cheese (cheddar, mozzarella, or a blend)

  • 1 tsp dried thyme (or 1 tbsp fresh)

  • ½ tsp paprika (optional)

  • Salt and black pepper, to taste

  • 1–2 tbsp olive oil or butter, for cooking

  • Optional garnish: parsley or chives


👩‍🍳 Instructions

1. Preheat the oven

  • Preheat to 375°F (190°C).

  • Lightly grease a 9×13-inch baking dish.


2. Cook the chicken

  1. Heat olive oil or butter in a skillet over medium heat.

  2. Add chicken pieces and season with salt, pepper, and paprika.

  3. Cook just until lightly browned (they don’t need to be fully cooked through yet).

  4. Remove from heat and set aside.


3. Make the creamy sauce

  1. In the same skillet, sauté onion and garlic for 2–3 minutes until fragrant.

  2. Stir in cream and chicken broth.

  3. Add thyme and season with salt and pepper.

  4. Simmer gently for 2–3 minutes, then remove from heat.


4. Assemble the bake

  1. Layer half of the sliced potatoes on the bottom of the baking dish.

  2. Add the browned chicken pieces evenly over the potatoes.

  3. Pour half of the creamy sauce on top.

  4. Add the remaining potato slices and top with the rest of the sauce.

  5. Sprinkle shredded cheese evenly over the top.


5. Bake

  • Cover with foil and bake for 45 minutes.

  • Remove foil and bake another 15–20 minutes, until potatoes are tender and the top is golden and bubbly.


6. Serve

  • Let rest 5–10 minutes before serving.

  • Garnish with fresh parsley or chives if desired.

  • Add veggies: Layer in sliced mushrooms, spinach, or broccoli for more flavor.

  • Cheesy version: Mix extra cheese into the sauce for a gooier texture.

  • Shortcut: Use pre-cooked or rotisserie chicken and parboil potatoes for faster baking.

  • Crispier top: Broil for 2–3 minutes at the end.
