🍲 Chicken and Dumplings (Classic Comfort Style)
Warm, hearty, and perfect for a cozy meal.
🛒 Ingredients
For the soup:
- 2 tbsp butter
- 1 small onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 1/4 cup flour
- 6 cups chicken broth
- 2 cups cooked shredded chicken (rotisserie works great)
- 1 cup milk or half-and-half
- 1 tsp dried thyme
- Salt & black pepper to taste
For the dumplings:
- 1 cup all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tbsp fresh parsley (optional)
- 2 tbsp cold butter, cubed
- 1/2 cup milk
👩🍳 Instructions
1️⃣ Make the Soup Base
- In a large pot, melt butter over medium heat.
- Add onion, carrots, and celery. Cook 5–7 minutes until softened.
- Stir in garlic and cook 30 seconds.
- Sprinkle flour over vegetables; stir for 1 minute.
- Gradually whisk in chicken broth.
- Add thyme and bring to a gentle simmer.
- Stir in chicken and milk. Simmer 10 minutes until slightly thickened.
2️⃣ Make the Dumplings
- In a bowl, mix flour, baking powder, salt, and parsley.
- Cut in cold butter until crumbly.
- Stir in milk just until combined (don’t overmix).
3️⃣ Cook the Dumplings
- Drop spoonfuls of dough onto gently simmering soup.
- Cover with a lid.
- Simmer (don’t lift lid!) for 12–15 minutes until dumplings are fluffy and cooked through.
🍽️ Tips
- Keep the soup at a gentle simmer, not a rolling boil.
- Dumplings steam under the lid — lifting it can make them dense.
- For extra richness, add a splash of heavy cream at the end.
