🥕🍗 Chicken and Carrot Cream Cheese Spread

Ingredients (Serves 4–6)

  • 1 cup (about 200 g) cooked chicken, finely chopped or shredded

  • 1 medium carrot, finely grated

  • 8 oz (225 g) cream cheese, softened

  • 2 tbsp mayonnaise or Greek yogurt (for extra creaminess)

  • 1–2 tsp lemon juice (to brighten the flavor)

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • Salt and pepper, to taste

  • Optional:

    • 1–2 tbsp chopped green onions or parsley

    • A pinch of paprika or curry powder for flavor variation

  1. Prepare ingredients

    • Shred or finely chop the cooked chicken (rotisserie chicken works great).

    • Grate the carrot finely (you can lightly sauté it for 2–3 minutes if you prefer it softer).

  2. Mix the base

    • In a medium bowl, beat the cream cheese until smooth.

    • Add mayonnaise (or yogurt) and mix until creamy.

  3. Add flavor

    • Stir in lemon juice, garlic powder, onion powder, salt, and pepper.

  4. Combine

    • Add the chicken, carrot, and any optional herbs or spices.

    • Mix well until evenly blended.

  5. Chill and serve

    • Cover and refrigerate for 30 minutes to let the flavors meld.

    • Serve as a spread on toast, bagels, or sandwiches — or as a dip with crackers or veggie sticks.


💡 Variations

  • Warm dip: Spread the mixture in a small baking dish, top with a little shredded cheese, and bake at 350°F (175°C) for 10–15 minutes until warm and bubbly.

  • Roll-ups: Spread on tortillas, roll tightly, chill, then slice into pinwheels.

  • Stuffed chicken breasts: Use as a filling for baked chicken — super creamy and flavorful!
