1 lb (450 g) boneless, skinless chicken breasts

1 large egg

½ cup shredded mozzarella (or cheddar, or a mix)

2 tbsp mayonnaise or Greek yogurt

2 tbsp all-purpose flour (or almond flour for low carb)

2 tbsp chopped green onions (optional but great for flavor)

1 garlic clove, minced (or ½ tsp garlic powder)

Chop the chicken:
Cut the chicken breasts into very small cubes (¼-inch pieces) or pulse them briefly in a food processor — don’t make it a paste. -
Mix it up:
In a bowl, combine the chopped chicken, egg, cheese, mayonnaise, flour, green onions, garlic, salt, and pepper.
Mix well until evenly combined. The mixture will be thick and sticky. -
Form fritters:
Heat oil in a nonstick skillet over medium heat.
Spoon about 2 tablespoons of the chicken mixture per fritter into the pan and flatten slightly with the back of the spoon. -
Cook:
Fry for about 3–4 minutes per side until golden brown and cooked through (internal temp: 165°F / 74°C). -
Drain & serve:
Place fritters on a paper towel–lined plate to drain.
Serve hot with dipping sauce — try garlic aioli, ranch, spicy mayo, or sweet chili sauce.
