Ingredients
Dough/Batter:
- 1 cup (2 sticks) unsalted butter, softened
- 1 ½ cups granulated sugar
- 4 large eggs
- 1 tsp vanilla extract
- 1/4 tsp almond extract (optional but AMAZING with cherry!)
- 3 cups all-purpose flour
- 1 tsp salt
Filling:
- 1 can (21 oz) cherry pie filling
Glaze (optional but recommended):
- 1 cup powdered sugar
- 2–3 tbsp milk
- 1/2 tsp vanilla or almond extract
Instructions
1. Make the dough
- Preheat oven to 350°F (175°C).
- Cream butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well.
- Add vanilla (and almond extract if using).
- Mix in flour and salt until a thick batter forms.
2. Assemble the bars
- Spread about 2/3 of the dough into a greased 9×13 baking pan.
- Spread cherry pie filling evenly over the dough.
- Drop spoonfuls of the remaining dough over the top—no need to cover completely; it will spread a bit as it bakes.
3. Bake
- Bake for 30–35 minutes, or until golden around the edges.
- Let cool for at least 20 minutes.
4. Add the glaze
- Stir together powdered sugar, milk, and extract.
- Drizzle over cooled bars.
