cheesy mashed potato puffs

Here’s a delicious recipe for Cheesy Mashed Potato Puffs—crispy on the outside, soft and cheesy on the inside, perfect as a side or snack.


Ingredients (Makes ~12 puffs)

  • 2 cups leftover mashed potatoes (plain or lightly seasoned)
  • 1 cup shredded cheddar cheese (or your favorite cheese)
  • 1 egg, lightly beaten
  • ¼ cup green onions or chives, chopped (optional)
  • ¼ cup breadcrumbs (for coating)
  • 2 tbsp all-purpose flour (to help binding)
  • Salt and pepper, to taste
  • Cooking spray or 2–3 tbsp oil for baking/frying

Instructions

1. Prepare the mixture

  1. In a large bowl, combine mashed potatoes, shredded cheese, egg, flour, green onions (if using), salt, and pepper.
  2. Mix until smooth and well combined.

2. Shape the puffs

  1. Take about 2 tablespoons of the mixture and form into small balls or oval shapes.
  2. Roll each puff lightly in breadcrumbs for a crispy coating.

3. Cook the puffs

Option A – Oven-baked (healthier)

  1. Preheat oven to 400°F (200°C).
  2. Place puffs on a baking sheet lined with parchment paper.
  3. Spray lightly with cooking spray.
  4. Bake 20–25 minutes, flipping halfway, until golden brown.

Option B – Pan-fried (crispiest)

  1. Heat 2–3 tbsp oil in a skillet over medium heat.
  2. Fry puffs 2–3 minutes per side until golden brown and crispy.
  3. Drain on paper towels to remove excess oil.

4. Serve

  • Serve hot with sour cream, ketchup, or a creamy dipping sauce.

Tips & Variations

  • Add bacon bits or diced ham for extra flavor.
  • Mix in garlic powder or paprika for a subtle kick.
  • For a gluten-free version, use gluten-free breadcrumbs or crushed cornflakes.
