Here’s a hearty, family-favorite recipe for Cheesy Beef Stuffed Potatoes—crispy on the outside, creamy and cheesy on the inside 🧀🥔


Cheesy Beef Stuffed Potatoes

Ingredients (serves 4)

  • 4 large russet potatoes
  • 1 lb ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon Italian seasoning (or taco seasoning if you prefer)
  • 1 cup shredded cheddar cheese (or Colby-Jack)
  • 1/2 cup sour cream
  • 2 tablespoons butter
  • 2 tablespoons milk
  • Optional toppings: green onions, bacon bits, extra cheese

Instructions

  1. Bake the potatoes:
    Preheat oven to 400°F (205°C). Scrub potatoes, poke holes with a fork, rub lightly with oil, and bake for 50–60 minutes until tender.
  2. Cook the beef:
    In a skillet over medium heat, cook ground beef with onion until browned. Drain excess fat.
    Add garlic, salt, pepper, paprika, and seasoning. Cook 1–2 more minutes.
  3. Prepare potato filling:
    Let potatoes cool slightly. Slice each in half lengthwise and scoop out the insides into a bowl, leaving a thin shell.
  4. Mix filling:
    Mash potato flesh with butter, milk, sour cream, and 1/2 cup cheese until creamy.
    Stir in cooked beef.
  5. Stuff & bake:
    Spoon mixture back into potato shells. Top with remaining cheese.
    Bake at 400°F for 15–20 minutes, until cheese is melted and bubbly.
  6. Serve:
    Add toppings as desired and enjoy hot.

Variations

  • Mexican-style: Use taco seasoning, add black beans & corn, top with salsa.
  • BBQ beef: Mix beef with BBQ sauce and use smoked cheddar.
  • Extra creamy: Add a little cream cheese to the filling.
