Classic Baked Cheesecake (Easy)

Ingredients

  • 200 g (about 14 cookies) graham crackers or digestive biscuits
  • 100 g butter, melted
  • 450 g (16 oz) cream cheese, softened
  • ¾ cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream (or plain yogurt)

Steps

  1. Crust: Crush cookies, mix with melted butter, press into the bottom of a pan. Chill 10 minutes.
  2. Filling: Beat cream cheese until smooth. Add sugar, then eggs (one at a time), vanilla, and sour cream.
  3. Bake: Pour filling over crust. Bake at 160°C / 325°F for ~45–50 minutes (center should still jiggle slightly).
  4. Cool: Let it cool slowly, then refrigerate at least 3 hours.
  5. Serve: Plain or topped with fruit, chocolate, or caramel.

No-Bake Cheesecake (Even Easier)

Skip the oven—use the same crust, then mix cream cheese, sugar, vanilla, and whipped cream. Chill until firm.
