Cheeseburger soup

Here’s a creamy, comforting Cheeseburger Soup—it tastes just like a cheeseburger in a bowl and is perfect for chilly days 🍔🥣


Cheeseburger Soup (Serves 6)

Ingredients

  • 1 lb (450 g) ground beef
  • ½ cup diced onion
  • ½ cup diced celery
  • ½ cup diced carrots
  • 3 cups chicken or beef broth
  • 2 cups diced potatoes
  • ¼ cup butter
  • ¼ cup all-purpose flour
  • 2 cups milk (or half-and-half for extra creaminess)
  • 2 cups shredded cheddar cheese
  • Salt and black pepper to taste
  • Optional toppings: cooked bacon, green onions, extra cheese

Instructions

  1. Brown the beef:
    In a large pot, cook ground beef over medium heat until browned. Drain excess grease and set aside.
  2. Cook vegetables:
    In the same pot, melt butter. Add onion, celery, and carrots. Cook until softened (about 5 minutes).
  3. Make the base:
    Stir in flour and cook for 1 minute. Slowly whisk in broth, then add potatoes.
  4. Simmer:
    Bring to a gentle boil, then reduce heat and simmer 10–15 minutes, until potatoes are tender.
  5. Add dairy:
    Stir in milk and cooked beef. Simmer 5 minutes (do not boil).
  6. Add cheese:
    Reduce heat to low. Stir in cheddar cheese until melted and smooth. Season with salt and pepper.
  7. Serve:
    Ladle into bowls and add toppings if desired.

  • Extra cheeseburger flavor: Add 1 tsp mustard or a splash of pickle juice
  • Low-carb option: Swap potatoes for cauliflower
  • Thicker soup: Mash some potatoes before adding cheese
