Here’s a simple but irresistible recipe that you can make on the grill, stove, or oven:


🌶️ Cajun Corn on the Cob

Ingredients (serves 4)

  • 4 ears of fresh corn, husked
  • 4 tbsp unsalted butter, melted
  • 1 ½ tsp Cajun seasoning (store-bought or homemade — see below)
  • ½ tsp garlic powder
  • ¼ tsp smoked paprika (optional, for extra depth)
  • Salt and black pepper, to taste
  • Fresh parsley or chopped green onion, for garnish (optional)
  • Lime or lemon wedges, for serving

Instructions

🧈 1. Make the Cajun butter:
In a small bowl, mix together the melted butter, Cajun seasoning, garlic powder, paprika, and a pinch of salt and pepper.

🔥 2. Cook the corn (choose your method):

  • Grill: Preheat to medium-high. Brush corn with the butter mixture, then grill for 10–12 minutes, turning every few minutes until charred and tender.
  • Stovetop/Skillet: Heat a large pan over medium-high heat. Add corn and sear while brushing with the Cajun butter until lightly charred and cooked through, about 8–10 minutes.
  • Oven: Preheat to 425°F (220°C). Place corn on a foil-lined baking sheet, brush with Cajun butter, and roast for 20–25 minutes, turning halfway.

✨ 3. Finish and serve:
Brush with any remaining Cajun butter, sprinkle with parsley or green onions, and squeeze fresh lime or lemon juice over the top.


🔥 Homemade Cajun Seasoning (optional)

Mix and store in a jar:

  • 2 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • ½ tsp cayenne pepper (adjust for heat)
  • ½ tsp black pepper
  • ½ tsp salt

💡 Optional twists

  • Sprinkle Parmesan or Cotija cheese on top for a Cajun–Mexican fusion.
  • Mix mayo + Cajun seasoning for a creamy Cajun “street corn” style sauce.
  • Add a drizzle of honey to the butter for a sweet-spicy balance.
