Here’s a comforting, hearty Cabbage Stew—perfect for a simple, filling meal 🥬🥕


Cabbage Stew

Servings: 4–6

Ingredients

  • 1 small head green cabbage, chopped
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 potatoes, cubed
  • 1 bell pepper, chopped (optional)
  • 4 cups vegetable or chicken broth
  • 1 can (14 oz) diced tomatoes
  • 1 tsp paprika
  • ½ tsp dried thyme
  • ½ tsp salt (adjust to taste)
  • ¼ tsp black pepper
  • Optional: cooked sausage, ham, or bacon for extra flavor

Instructions

  1. Sauté aromatics
    • Heat olive oil in a large pot over medium heat.
    • Add onion and garlic, sauté 3–4 minutes until softened.
  2. Add vegetables
    • Add carrots, potatoes, and bell pepper. Cook 5 minutes, stirring occasionally.
  3. Add cabbage and liquid
    • Stir in chopped cabbage.
    • Add broth, diced tomatoes, paprika, thyme, salt, and pepper.
  4. Simmer
    • Bring to a boil, then reduce heat and simmer 25–30 minutes, until vegetables are tender.
  5. Serve
    • Taste and adjust seasoning.
    • Serve hot with bread or over rice.

Tips & Variations

  • Add a splash of vinegar or lemon juice for a tangy kick.
  • For a richer flavor, sauté diced bacon or sausage first and use the drippings for the stew.
  • You can blend part of the stew for a creamier texture.
