Easy Cabbage Soup
Ingredients
- 1 tbsp oil or butter
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 3 carrots, sliced
- 2 celery stalks, sliced (optional)
- ½ head green cabbage, chopped
- 1 can (14–15 oz) diced tomatoes
- 6 cups chicken or vegetable broth
- Salt & pepper to taste
- 1 tsp paprika or Italian seasoning
- Optional: cooked chicken, sausage, or beans for protein
Instructions
- Sauté veggies
Heat oil in a large pot over medium heat.
Cook onion until soft, then add garlic and cook 30 seconds. - Add vegetables
Stir in carrots, celery, and cabbage. Cook 5 minutes until slightly softened. - Add liquid & seasoning
Pour in broth and diced tomatoes.
Add salt, pepper, and seasoning. - Simmer
Bring to a boil, then reduce heat and simmer 20–30 minutes until veggies are tender. - Taste & serve
