Cabbage soup

Here’s a simple, hearty cabbage soup that’s easy to make and great as a light meal or side 🥬🍲


Easy Cabbage Soup

Ingredients

  • 1 tbsp oil or butter
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, sliced (optional)
  • ½ head green cabbage, chopped
  • 1 can (14–15 oz) diced tomatoes
  • 6 cups chicken or vegetable broth
  • Salt & pepper to taste
  • 1 tsp paprika or Italian seasoning
  • Optional: cooked chicken, sausage, or beans for protein

Instructions

  1. Sauté veggies
    Heat oil in a large pot over medium heat.
    Cook onion until soft, then add garlic and cook 30 seconds.
  2. Add vegetables
    Stir in carrots, celery, and cabbage. Cook 5 minutes until slightly softened.
  3. Add liquid & seasoning
    Pour in broth and diced tomatoes.
    Add salt, pepper, and seasoning.
  4. Simmer
    Bring to a boil, then reduce heat and simmer 20–30 minutes until veggies are tender.
  5. Taste & serve
    Adjust seasoning and enjoy hot.

Easy Variations

  • Southern-style: Add smoked sausage or ham.
  • Creamy: Stir in a little milk at the end.
  • Spicy: Add red pepper flakes.
  • Extra filling: Add potatoes or rice.
