Instructions

1. Make the dough:

  • Mix flour, salt, and warm water in a bowl until a dough forms.
  • Knead for 5–7 minutes until smooth and elastic. Cover and let rest for 20–30 minutes.

2. Prepare the filling:

  • In a large bowl, combine shredded cabbage, carrot, green onions, garlic, ginger, soy sauce, sesame oil, and black pepper.
  • If using meat, cook it lightly before mixing with the vegetables.
  • Optional: squeeze out excess water from the cabbage to avoid soggy dumplings.

3. Shape the dumplings:

  • Roll the dough into a long log and cut into small pieces (~1 inch each).
  • Roll each piece into a thin circle (~3 inches diameter).
  • Place a teaspoon of filling in the center and fold the dough over, pinching edges to seal (half-moon shape).

4. Cook the dumplings:
Option A – Pan-fry (potstickers):

  • Heat 1 tbsp oil in a skillet over medium heat.
  • Arrange dumplings in the pan and fry for 2–3 minutes until the bottoms are golden.
  • Add 1/4 cup water, cover, and steam for 5–6 minutes until cooked through.

Option B – Steam:

  • Place dumplings in a steamer lined with parchment paper or cabbage leaves.
  • Steam for 8–10 minutes until the dough is tender and filling is cooked.

5. Serve:

  • Serve hot with soy sauce, chili oil, or your favorite dipping sauce.
