Buttery vanilla peach cobbler

Here’s a rich, buttery vanilla peach cobbler that’s golden, gooey, and perfect warm with ice cream. It’s straightforward to make but tastes like a dessert you spent hours on.


Ingredients (serves 6–8)

For the filling:

  • 4 cups fresh or canned peaches (drained if canned), sliced
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon (optional, but recommended)
  • 1 teaspoon lemon juice

For the cobbler topping:

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter (1 stick), melted
  • 1/4 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven:
    • 350°F (175°C).
  2. Prepare the peaches:
    • In a medium bowl, mix peaches, sugar, vanilla, cinnamon, and lemon juice.
    • Pour into a greased 8×8-inch or 9×9-inch baking dish.
  3. Make the topping:
    • In another bowl, whisk together flour, sugar, baking powder, and salt.
    • Stir in melted butter, milk, and vanilla until just combined.
  4. Assemble:
    • Spoon the topping over the peaches. Don’t worry about covering completely—the topping will spread while baking.
  5. Bake:
    • Bake 35–40 minutes, until the topping is golden brown and the filling is bubbly.
  6. Cool slightly and serve:
    • Best served warm with a scoop of vanilla ice cream or a dollop of whipped cream.

💡 Tips:

  • If using frozen peaches, thaw and drain them first to avoid extra liquid.
  • For extra buttery flavor, dot the topping with small bits of butter before baking.
  • You can swap peaches for other fruits like berries, cherries, or plums.
