Here’s a classic, chewy Butterscotch Bars recipe 🍯🍪 — simple, rich, and perfect for potlucks or dessert trays.


Butterscotch Bars

Ingredients

  • 1 cup unsalted butter, melted
  • 1½ cups brown sugar (packed)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1¾ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1½ cups butterscotch chips

Optional add-ins

  • ½ cup chopped walnuts or pecans
  • ½ cup chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C).
    Grease or line a 9×13-inch baking pan with parchment paper.
  2. Mix wet ingredients
    In a large bowl, whisk melted butter and brown sugar until smooth.
    Add eggs and vanilla; mix well.
  3. Add dry ingredients
    Stir in flour, baking powder, and salt just until combined.
    Fold in butterscotch chips (and nuts if using).
  4. Bake
    Spread batter evenly in the pan.
    Bake 25–30 minutes, until edges are set and a toothpick comes out mostly clean.
  5. Cool & slice
    Let cool completely before cutting into bars.

Tips & Variations

  • Extra gooey: Slightly underbake by 2 minutes
  • Thicker bars: Use a 9×9 pan and bake a few minutes longer
  • Holiday twist: Sprinkle flaky sea salt on top before baking
  • Frosted version: Top with cream cheese or vanilla glaze once cooled
