Buttermilk cornbread

Buttermilk Cornbread

Makes one 8-inch skillet or square pan

Ingredients

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1 tbsp sugar (optional, traditional Southern style is less sweet)
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp salt
  • 1¼ cups buttermilk
  • 2 large eggs
  • ⅓ cup melted butter or bacon grease
  • 2 tbsp vegetable oil (for the skillet)

Instructions

  1. Preheat oven
    425°F (220°C). Place a cast-iron skillet with oil in the oven while it heats.
  2. Mix dry ingredients
    In a bowl, whisk cornmeal, flour, sugar (if using), baking powder, baking soda, and salt.
  3. Mix wet ingredients
    Whisk buttermilk, eggs, and melted butter.
  4. Combine
    Stir wet ingredients into dry ingredients just until combined (do not overmix).
  5. Bake
    Carefully remove hot skillet, pour batter in (it should sizzle). Bake 20–25 minutes until golden and crisp on edges.
  6. Serve
    Slice warm and enjoy with butter, honey, or alongside beans, greens, or chili.
