Brown Sugar Pork Chops (serves 4)

Ingredients

  • 4 bone-in or boneless pork chops (¾–1 inch thick)
  • Salt & black pepper
  • ¼ cup brown sugar (light or dark)
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp chili powder or cayenne (optional, tiny kick)
  • 1 tbsp olive oil or melted butter

How

  1. Heat oven to 400°F / 205°C.
  2. Pat pork chops dry. Season both sides lightly with salt and pepper.
  3. Mix brown sugar, paprika, garlic powder, onion powder, and chili powder.
  4. Rub chops with oil/butter, then press brown sugar mix firmly onto both sides.
  5. Place chops in a lightly greased baking dish or skillet.
  6. Bake 18–22 minutes (depending on thickness) until internal temp hits 145°F.
  7. Rest 5 minutes — juices lock in, magic happens.

Pro tips (trust these)

  • Thick chops = juicy chops
  • Don’t overbake — pork is done at 145°F, not dry-at-forever
  • If sugar browns too fast, tent loosely with foil

Optional upgrades

  • Add sliced apples or onions to the pan
  • Splash of apple cider vinegar or balsamic at the end to balance sweetness
  • Finish with a pat of butter + cracked pepper
