Ingredients (for 4 servings)

  • 4 bone-in or boneless pork chops (about 1-inch thick)

  • 1/4 cup brown sugar (light or dark, depending on preference)

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1/2 tsp garlic powder

  • 1/2 tsp paprika (optional, adds color and mild smokiness)

  • 2 tbsp olive oil or vegetable oil

  • 2 tsp butter (optional, for extra richness)

  • Optional garnish: fresh parsley


Instructions

  1. Prep the Pork Chops

    • Pat the pork chops dry with paper towels. This helps the sugar caramelize properly.

    • In a small bowl, mix brown sugar, salt, pepper, garlic powder, and paprika.

    • Rub this mixture evenly over both sides of each pork chop.

  2. Cook the Pork Chops

    • Heat a large skillet over medium-high heat and add oil.

    • Once hot, place pork chops in the skillet. Cook 3–4 minutes per side until nicely browned.

  3. Caramelize and Finish

    • Reduce heat to medium-low. Add butter (if using) and let it melt.

    • Spoon the melted butter and pan juices over the pork chops for extra flavor.

    • Continue cooking for another 2–3 minutes per side, until internal temperature reaches 145°F (63°C).

  4. Rest and Serve

    • Transfer the pork chops to a plate and let rest 3–5 minutes to retain juices.

    • Garnish with chopped parsley, if desired, and serve with mashed potatoes, roasted veggies, or a simple salad.

  • For extra caramelization, you can broil the pork chops for 1–2 minutes at the end.

  • Avoid cooking too long; brown sugar burns easily.
