Brown beans and cornbread is a classic, comforting Southern dish that combines the hearty, savory flavor of beans with the slightly sweet, crumbly goodness of cornbread. It’s simple, satisfying, and perfect for a cozy meal. Here’s how to make it:

Brown Beans (or Pinto Beans) Recipe:

Ingredients:

  • 2 cups dry pinto beans (or brown beans)
  • 6 cups water (for soaking and cooking)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 ham hock or 1 lb smoked sausage (optional, for added flavor)
  • 1 bay leaf
  • 1 tsp salt (adjust to taste)
  • 1/2 tsp black pepper
  • 1/2 tsp paprika (optional, for extra flavor)
  • 1 tbsp olive oil or butter (optional, for sautéing)

Instructions:

1. Soak the Beans:

  • Overnight Method: Place the dry beans in a large bowl and cover them with water. Let them soak overnight. Drain and rinse the beans before cooking.
  • Quick Soak Method: If you’re short on time, place the beans in a pot, cover them with water, bring to a boil, and let them boil for 2-3 minutes. Remove from heat, cover, and let them sit for an hour. Drain and rinse the beans.

2. Cook the Beans:

  • In a large pot or Dutch oven, heat a tablespoon of olive oil or butter over medium heat (if using).
  • Add the chopped onion and garlic, and sauté for about 5 minutes until softened and fragrant.
  • Add the soaked and drained beans to the pot, followed by the ham hock or sausage (if using), bay leaf, salt, pepper, and paprika.
  • Pour in about 6 cups of water, or enough to cover the beans by 2 inches.
  • Bring the mixture to a boil, then reduce the heat to low and simmer, uncovered, for about 1.5 to 2 hours, or until the beans are tender. Stir occasionally and check for water level; add more if necessary to keep the beans submerged.
  • Once the beans are cooked and tender, taste and adjust seasoning, adding more salt or pepper if needed.

3. Serve:

  • Serve the brown beans hot with the cornbread, and enjoy! You can also serve them with a drizzle of hot sauce or a sprinkle of fresh herbs like parsley or cilantro if desired.

Cornbread Recipe:

Ingredients:

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar (optional, depending on how sweet you like it)
  • 4 tsp baking powder
  • 1/2 tsp salt
  • 1 cup buttermilk (or milk)
  • 1/4 cup unsalted butter, melted
  • 1 large egg

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 425°F (220°C).
  • Grease a 9-inch round or square baking dish, or use a cast-iron skillet for an extra crispy crust.

2. Mix the Dry Ingredients:

  • In a large bowl, combine the cornmeal, flour, sugar, baking powder, and salt. Stir until well combined.

3. Combine the Wet Ingredients:

  • In a separate bowl, whisk together the buttermilk, melted butter, and egg until smooth.

4. Make the Batter:

  • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; the batter will be lumpy, and that’s okay!

5. Bake:

  • Pour the cornbread batter into the prepared baking dish or skillet, spreading it out evenly.
  • Bake for 20-25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  • If you’re using a cast-iron skillet, you can heat it with a little butter in the oven before pouring in the batter for an extra crispy crust.

6. Serve:

  • Let the cornbread cool for a few minutes before slicing into squares or wedges. Serve it warm with your brown beans!

Tips:

  • Brown Beans Variations: If you like a spicier kick, add a couple of chopped jalapeños or a pinch of cayenne pepper to the beans. You can also substitute the ham hock with bacon or even a vegetarian sausage for a different flavor.
  • Cornbread Variations: For a richer cornbread, you can add a little more butter or a bit of cream corn for added moisture. Some people also love adding shredded cheddar cheese to the cornbread for extra flavor.
