Bread dough

Here’s a simple recipe for basic bread dough that you can use for loaves, rolls, or even pizza bases:


Ingredients (makes 1 loaf)

  • 3 ½ cups (420g) all-purpose flour
  • 1 packet (7g / 2 ¼ tsp) active dry yeast
  • 1 ¼ cups (300ml) warm water (around 100–110°F / 37–43°C)
  • 2 tbsp olive oil (optional for softer bread)
  • 1 ½ tsp salt
  • 1 tsp sugar or honey (to feed the yeast)

Instructions

  1. Activate the yeast:
    • In a small bowl, combine warm water, sugar, and yeast.
    • Let it sit 5–10 minutes until it becomes frothy.
  2. Mix the dough:
    • In a large bowl, combine flour and salt.
    • Make a well in the center and pour in the yeast mixture and olive oil.
    • Mix with a spoon until it starts coming together.
  3. Knead the dough:
    • Turn the dough onto a floured surface.
    • Knead for 8–10 minutes until smooth and elastic.
    • (You can also knead with a stand mixer using a dough hook for 5–6 minutes.)
  4. First rise:
    • Place the dough in a lightly oiled bowl, cover with a damp cloth or plastic wrap.
    • Let it rise in a warm place for 1–2 hours, until doubled in size.
  5. Shape and second rise:
    • Punch down the dough to release air.
    • Shape into a loaf or rolls and place on a greased baking tray or loaf pan.
    • Cover and let rise for another 30–45 minutes.
  6. Bake:
    • Preheat oven to 375°F (190°C).
    • Bake loaf for 25–30 minutes, or until golden brown and hollow-sounding when tapped.
    • Cool on a wire rack before slicing.

✅ Tips:

  • For extra flavor, add herbs, garlic, or cheese to the dough.
  • Brushing the top with egg wash or butter before baking gives a nice golden crust.
