🍑🫐 Blueberry Peach Bread

Ingredients (1 loaf)

  • 1 ¾ cups all-purpose flour

  • 1 tsp baking soda

  • ½ tsp baking powder

  • ¼ tsp salt

  • ½ cup unsalted butter, softened

  • ¾ cup granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • ½ cup plain yogurt or sour cream

  • 1 cup fresh peaches, peeled and diced (or thawed frozen peaches)

  • 1 cup fresh or frozen blueberries (if frozen, do not thaw)

  • Optional: 1 tsp cinnamon for extra flavor

1. Preheat oven

  • Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.

2. Mix dry ingredients

  • In a medium bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon if using.

3. Mix wet ingredients

  • In a large bowl, cream butter and sugar until light and fluffy.

  • Beat in eggs, one at a time, then add vanilla extract and yogurt.

4. Combine

  • Gradually fold dry ingredients into wet ingredients until just combined.

  • Gently fold in peaches and blueberries, being careful not to overmix.

5. Bake

  • Pour batter into prepared loaf pan.

  • Bake 55–65 minutes, or until a toothpick inserted in the center comes out clean.

6. Cool and serve

  • Let bread cool in pan 10–15 minutes, then transfer to a wire rack to cool completely.

  • Slice and enjoy plain, or with butter or cream cheese.

  • Prevent sinking: Toss fruit in a little flour before folding into batter.

  • Extra moist: Add 2–3 tbsp of milk or orange juice to the batter.

  • Flavor boost: Add ½ tsp almond extract for a subtle nutty sweetness.
