Bison meatloaf

Here’s a hearty and flavorful Bison Meatloaf recipe—leaner than beef but still juicy and delicious 🥩🍽️


🦬 Bison Meatloaf

Ingredients (serves 4–6)

  • 1 ½ lbs ground bison
  • 1 cup breadcrumbs (panko or regular)
  • 1/2 cup milk
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large egg
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme or Italian seasoning
  • 1/2 cup ketchup (for topping)
  • Optional: 1 tablespoon brown sugar or honey (mixed with ketchup for glaze)

Instructions

  1. Preheat oven
    • 350°F (175°C). Line a loaf pan or baking sheet with parchment paper.
  2. Prepare the meatloaf mixture
    • In a large bowl, combine breadcrumbs and milk; let sit 2–3 minutes to soften.
    • Add ground bison, onion, garlic, egg, Worcestershire sauce, salt, pepper, and seasoning.
    • Mix gently until just combined (avoid overmixing to keep it tender).
  3. Shape and top
    • Form into a loaf shape on a baking sheet or press into a loaf pan.
    • Spread ketchup (or ketchup + brown sugar) evenly over the top.
  4. Bake
    • Bake 50–60 minutes, until internal temperature reaches 160°F (71°C).
    • Let rest 5–10 minutes before slicing.
  5. Serve
    • Slice and serve with mashed potatoes, roasted veggies, or a salad.

💡 Tips

  • Bison is leaner than beef, so don’t overcook—use a meat thermometer for best results.
  • For extra moisture, mix in 1/4 cup grated carrot or zucchini.
  • Leftovers make great sandwiches the next day.
