Biscuits and gravy

Biscuits and gravy is a classic comfort food dish from the American South — warm, flaky biscuits smothered in creamy sausage gravy. Here’s a simple and delicious way to make it from scratch:


🧈 Ingredients

For the Biscuits:

  • 2 cups all-purpose flour

  • 1 tbsp baking powder

  • ½ tsp baking soda

  • 1 tsp salt

  • 6 tbsp cold unsalted butter (cut into cubes)

  • ¾ cup cold buttermilk (plus a little more if needed)

For the Sausage Gravy:

  • 1 lb breakfast sausage (pork sausage works great)

  • 3 tbsp all-purpose flour

  • 2–2½ cups whole milk (depending on how thick you want it)

  • Salt and freshly ground black pepper, to taste

  • Optional: pinch of cayenne or crushed red pepper flakes for heat


👩‍🍳 Instructions

1. Make the Biscuits:

  1. Preheat oven to 425°F (220°C).

  2. In a large bowl, whisk together flour, baking powder, baking soda, and salt.

  3. Cut in cold butter using a pastry cutter or your fingers until the mixture looks like coarse crumbs.

  4. Stir in buttermilk until dough just comes together.

  5. Turn dough onto a floured surface, fold it over a few times, and pat it out to about 1-inch thick.

  6. Cut out biscuits with a round cutter (or a glass) and place them on a baking sheet.

  7. Bake 12–15 minutes, until golden brown.

2. Make the Gravy:

  1. In a large skillet, cook sausage over medium heat until browned and crumbly.

  2. Sprinkle flour over the sausage and stir for 1–2 minutes to cook off the raw taste.

  3. Gradually pour in milk while stirring constantly until the gravy thickens (about 5–7 minutes).

  4. Season generously with salt and pepper. Add cayenne if you like a bit of spice.

3. Serve:

  • Split biscuits in half and ladle sausage gravy over the top.

  • Serve warm with black coffee or orange juice.
