Here’s a Beefy Cheesy Loaded Melt Burrito recipe—hearty, gooey, and packed with flavor 🌯🧀🥩

Beefy Cheesy Loaded Melt Burrito

Ingredients (serves 4)

For the filling:

  • 1 lb (450 g) ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • ½ tsp cumin
  • Salt and pepper, to taste
  • ½ cup beef or chicken broth (optional for juicier filling)

Cheese & extras:

  • 1 cup shredded cheddar or Monterey Jack
  • ½ cup shredded mozzarella (optional for extra gooeyness)
  • ¼ cup chopped green chilies or jalapeños (optional)
  • ½ cup cooked rice or beans (optional)

To assemble:

  • 4 large flour tortillas (10–12 inch)
  • Butter or oil for pan-grilling
  • Sour cream, salsa, or guacamole for serving

Instructions

1. Cook the beef filling

  1. Heat a skillet over medium heat.
  2. Add ground beef, cook until browned. Drain excess fat if needed.
  3. Add onions and garlic; sauté until softened.
  4. Stir in chili powder, paprika, cumin, salt, and pepper.
  5. Add broth (if using) and cook 2–3 minutes until mixture is slightly saucy.

2. Assemble the burritos

  1. Warm tortillas slightly for pliability.
  2. Spoon beef mixture down the center of each tortilla.
  3. Sprinkle generously with cheese, and add optional extras (rice, beans, chilies).
  4. Fold sides over, then roll tightly.

3. Melt the burritos

  • Heat a skillet over medium heat.
  • Add a little butter or oil.
  • Place burritos seam-side down and cook 2–3 minutes per side, pressing lightly, until golden and cheese melts inside.

4. Serve

  • Slice in half if desired.
  • Top with sour cream, salsa, or guacamole.

Tips for Maximum Gooeyness

  • Mix two types of cheese: Cheddar + Mozzarella melts perfectly.
  • Don’t overfill: Burrito stays intact.
  • Pan-grill seam-side down first to seal the burrito.
  • Optional: Wrap in foil and bake 10 minutes at 350°F (175°C) for extra melty perfection.

Variations

  • Tex-Mex style: Add black beans, corn, and taco seasoning
  • Spicy beef melt: Add diced jalapeños or hot sauce to the filling
  • Loaded potato version: Add roasted potatoes or hash browns for extra heft
  • Breakfast burrito: Swap beef for sausage and add scrambled eggs

If you want, I can also give a fully “fast-food style” ooey-gooey version that melts cheese over the burrito in the oven for that diner-quality pull-apart effect 🌯🧀🔥.

Do you want me to do that version?
