Beef Tips and Gravy

Instructions (Stovetop Version)

  1. Season & Brown the Beef
    • Pat beef dry, season with salt and pepper.
    • Heat oil in a large skillet or Dutch oven over medium-high heat.
    • Brown beef on all sides (do in batches if needed). Remove and set aside.
  2. Sauté Aromatics
    • In the same pan, add onion (and mushrooms if using) and cook 3–4 minutes until softened.
    • Add garlic, cook 30 seconds.
  3. Make the Gravy
    • Sprinkle flour over onions and garlic, stir 1–2 minutes to cook out the raw taste.
    • Slowly whisk in beef broth and Worcestershire sauce.
    • Scrape up browned bits from the pan—they’re full of flavor.
  4. Simmer Beef
    • Return beef to the pan.
    • Add thyme/rosemary if using.
    • Reduce heat to low, cover, and simmer 1–1.5 hours until beef is tender and gravy thickened.
    • Taste and adjust salt/pepper.
  5. Serve
    • Over mashed potatoes, rice, or buttered noodles.

Tips for Extra Flavor

  • Browning the beef is key—it makes the gravy rich.
  • If you want faster cooking, use a slow cooker: brown beef, put everything in slow cooker, cook 6–7 hours on low.
  • For thicker gravy, mix 1–2 tsp cornstarch with a little cold water and stir in at the end, cooking 2–3 minutes until thick.
