  • 3–4 large carrots, peeled and cut into chunks
  • 3–4 medium potatoes, peeled and cut into chunks
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 bay leaves
  • 2 tbsp flour (optional, for thickening)
  • Salt & black pepper to taste
  • Fresh parsley, chopped (for garnish)

1️⃣ Brown the Beef

  1. Heat oil in a large pot or Dutch oven over medium-high heat.
  2. Season beef cubes with salt and pepper.
  3. Brown beef in batches to avoid overcrowding, about 3–4 minutes per side. Remove and set aside.

2️⃣ SautΓ© Aromatics

  1. In the same pot, add onion and cook until softened, about 5 minutes.
  2. Add garlic; cook 30 seconds until fragrant.

  1. Add carrots and potatoes.
  2. Simmer another 30–40 minutes until vegetables are tender.

5️⃣ Thicken (Optional)

  • Mix 2 tbsp flour with a little water to make a slurry and stir into stew.
  • Simmer 5–10 minutes until thickened.

6️⃣ Serve

  • Remove bay leaves.
  • Garnish with fresh parsley and serve hot with crusty bread.
