Ingredients

  • 1 lb beef stew meat, cut into cubes
  • 1 cup pearl barley
  • 4 cups beef broth (or more for desired thickness)
  • 2–3 carrots, diced
  • 2–3 celery stalks, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1–2 tbsp olive oil
  • Salt, pepper, and herbs (thyme, bay leaf, parsley)

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Brown beef cubes on all sides, then remove and set aside.
  3. In the same pot, sauté onion, carrots, celery, and garlic for 3–4 minutes.
  4. Return beef to the pot, add beef broth, barley, salt, pepper, and herbs.
  5. Bring to a boil, then reduce heat and simmer for 1–1.5 hours, until beef and barley are tender.
