For the beef and gravy:

  • 2 lbs (900 g) beef stew meat, chuck roast, or sirloin tips (cut into bite-size pieces)

  • 2 tbsp vegetable oil or butter

  • Salt and black pepper (to taste)

  • 1 medium onion, chopped

  • 2 cloves garlic, minced

  • 2 tbsp flour (for thickening)

  • 2 cups beef broth

  • 1 tbsp Worcestershire sauce

  • 1 tsp dried thyme (or 1 tbsp fresh)

  • 1 bay leaf (optional)

  • 1 tbsp soy sauce (optional β€” deepens flavor)

For the mashed potatoes:

  • 2 lbs (900 g) potatoes (Yukon Gold or Russet work best)

  • 4 tbsp butter

  • Β½ cup milk or cream (warm)

  • Salt and pepper to taste

1. Brown the beef

  • Pat beef dry and season generously with salt and pepper.

  • Heat oil in a large skillet or Dutch oven over medium-high heat.

  • Add beef in batches (don’t overcrowd) and sear until browned on all sides. Remove and set aside.

2. Cook aromatics

  • In the same pan, add onion and cook until softened (3–4 minutes).

  • Add garlic and cook another 30 seconds.

3. Make the gravy

  • Sprinkle flour over the onions and stir to coat. Cook for 1–2 minutes.

  • Slowly whisk in the beef broth until smooth.

  • Stir in Worcestershire, thyme, bay leaf, and soy sauce (if using).

4. Simmer

  • Return beef to the pan.

  • Cover and simmer on low heat for 1½–2 hours, or until the beef is fork-tender.
    (For quicker cooking, you can also do this in an Instant Pot β€” about 35 minutes on high pressure.)

5. Make the mashed potatoes

  • Peel and cut potatoes into chunks.

  • Boil in salted water until tender (about 15–20 minutes).

  • Drain, then mash with butter, milk, salt, and pepper until creamy.

6. Finish and serve

  • Remove the bay leaf from the gravy.

  • Taste and adjust seasoning (add more salt, pepper, or a splash of broth if too thick).

  • Spoon mashed potatoes onto plates and top generously with beef and gravy.
