Here’s a family-friendly Baked Beef and Bean Enchiladas recipe 🌯🧀
Hearty, cheesy, and easy to make.

Baked Beef and Bean Enchiladas

Ingredients

  • 1 lb ground beef
  • 1 can (15 oz) beans, drained (black or pinto)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1½ cups enchilada sauce (red or mild)
  • 1 tsp chili powder
  • ½ tsp cumin
  • Salt & pepper to taste
  • 8 small flour or corn tortillas
  • 2 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)

Optional toppings

  • Sour cream
  • Lettuce
  • Tomatoes
  • Green onions

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. Cook the filling
    In a skillet, cook ground beef and onion until browned.
    Add garlic, chili powder, cumin, salt, and pepper.
    Stir in beans and ½ cup enchilada sauce.
  3. Assemble enchiladas
    Spoon beef mixture into tortillas, add a little cheese, roll up, and place seam-side down in the dish.
  4. Top & bake
    Pour remaining enchilada sauce over the top.
    Sprinkle with remaining cheese.
  5. Bake
    Cover with foil and bake 20 minutes.
    Uncover and bake 10 minutes more until bubbly and melted.
  6. Serve
    Let rest 5 minutes. Add your favorite toppings.

Tips & Variations

  • Extra saucy: Add more enchilada sauce on top
  • Spicy: Add diced jalapeños or hot sauce
  • Make ahead: Assemble, cover, and refrigerate up to 24 hours
  • Freezer-friendly: Freeze before baking, then bake from thawed
