Baked Beef and Bean Enchiladas
Ingredients
- 1 lb ground beef
- 1 can (15 oz) beans, drained (black or pinto)
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1½ cups enchilada sauce (red or mild)
- 1 tsp chili powder
- ½ tsp cumin
- Salt & pepper to taste
- 8 small flour or corn tortillas
- 2 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)
Optional toppings
- Sour cream
- Lettuce
- Tomatoes
- Green onions
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- Cook the filling
In a skillet, cook ground beef and onion until browned.
Add garlic, chili powder, cumin, salt, and pepper.
Stir in beans and ½ cup enchilada sauce. - Assemble enchiladas
Spoon beef mixture into tortillas, add a little cheese, roll up, and place seam-side down in the dish. - Top & bake
Pour remaining enchilada sauce over the top.
Sprinkle with remaining cheese. - Bake
Cover with foil and bake 20 minutes.
Uncover and bake 10 minutes more until bubbly and melted. - Serve
Let rest 5 minutes. Add your favorite toppings.
