🥬 Asparagus-Stuffed Chicken

Ingredients (serves 4)

  • 4 boneless, skinless chicken breasts
  • 8–12 asparagus spears, trimmed (about 2–3 per breast)
  • 4 oz cream cheese or goat cheese, softened
  • 1/2 cup shredded mozzarella or cheddar (optional for extra melty filling)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • Salt & pepper, to taste
  • 2 tbsp olive oil
  • Optional garnish: fresh parsley or lemon wedges

Instructions

1. Preheat

  • Preheat oven to 375°F (190°C).
  • Grease a baking dish or line with parchment paper.

2. Prepare the chicken

  1. Butterfly each chicken breast: slice horizontally through the middle, creating a pocket (don’t cut all the way through).
  2. Season inside and out with salt, pepper, garlic powder, onion powder, and paprika.

3. Stuff the chicken

  • Spread cream cheese inside each pocket.
  • Place 2–3 asparagus spears inside.
  • Top with shredded mozzarella if using.
  • Secure with toothpicks if needed.

4. Sear the chicken (optional but adds color)

  • Heat olive oil in a skillet over medium-high heat.
  • Sear each stuffed chicken breast 2–3 minutes per side until golden brown.
  • Transfer to the prepared baking dish.

5. Bake

  • Bake 20–25 minutes, or until chicken reaches 165°F (74°C) internal temperature and asparagus is tender.
  • Remove toothpicks before serving.

6. Serve

  • Garnish with fresh parsley or a squeeze of lemon juice.
  • Serve with rice, mashed potatoes, or a light salad.
