They’re like warm, flaky biscuits filled with gooey cinnamon-apple pie filling — perfect for breakfast, brunch, or dessert. Here’s a simple and delicious recipe:


🍏 Apple Pie Biscuits

Ingredients

For the Biscuits:

  • 2 cups all-purpose flour

  • 1 tablespoon baking powder

  • ½ teaspoon salt

  • 2 tablespoons sugar

  • ½ cup (1 stick) cold unsalted butter, cubed

  • ¾ cup cold milk (or buttermilk)

For the Apple Filling:

  • 2 medium apples, peeled, cored, and diced (Granny Smith or Honeycrisp work great)

  • 2 tablespoons butter

  • ¼ cup brown sugar

  • 1 teaspoon ground cinnamon

  • ½ teaspoon vanilla extract

  • 1 teaspoon cornstarch + 1 tablespoon water (optional, for thickening)

For the Glaze (optional):

  • ½ cup powdered sugar

  • 1–2 tablespoons milk or cream

  • ¼ teaspoon vanilla extract


Instructions

1. Make the Apple Filling

  1. In a small skillet, melt 2 tablespoons butter over medium heat.

  2. Add the apples, brown sugar, and cinnamon. Cook for 5–7 minutes, stirring until the apples soften and the mixture thickens slightly.

  3. Stir in vanilla. (If it’s too runny, mix cornstarch and water, add to the pan, and cook 1–2 minutes more.)

  4. Remove from heat and let cool.


2. Make the Biscuit Dough

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.

  2. In a large bowl, whisk together flour, baking powder, salt, and sugar.

  3. Cut in cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.

  4. Stir in milk just until a dough forms (don’t overmix!).

  5. Turn onto a lightly floured surface and gently pat to about ½-inch thick.


3. Assemble the Biscuits

  1. Cut the dough into 8 circles (about 3 inches wide).

  2. Place 4 rounds on the baking sheet. Spoon a bit of the apple filling into the center of each.

  3. Top with the remaining 4 biscuit rounds and seal the edges with a fork or your fingers.

  4. (Optional) Brush tops with a little milk or melted butter for a golden finish.


4. Bake

Bake for 13–15 minutes, until golden brown.


5. Glaze

Whisk together powdered sugar, milk, and vanilla. Drizzle over warm biscuits and enjoy!

  • Use store-bought refrigerated biscuits for a quick shortcut.
