Here’s a classic homemade apple pie recipe — buttery crust, cinnamon-spiced filling, and all. 🥧


🍏 Classic Apple Pie

Ingredients

For the crust (makes a double crust):

  • 2½ cups (315 g) all-purpose flour
  • 1 tsp salt
  • 1 tbsp sugar (optional)
  • 1 cup (225 g) cold unsalted butter, cubed
  • 6–8 tbsp ice water

For the filling:

  • 6–7 medium apples (about 2 lbs / 900 g) — a mix of Granny Smith + Honeycrisp or your favorite tart/sweet combo
  • ¾ cup (150 g) sugar
  • 2 tbsp all-purpose flour
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp salt
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract (optional)

For finishing:

  • 1 tbsp butter, cut into small bits
  • 1 egg (beaten) + 1 tbsp milk (for egg wash)
  • 1–2 tsp sugar (for sprinkling)

🥣 Instructions

1. Make the crust

  1. In a large bowl, whisk flour, salt, and sugar.
  2. Cut in the cold butter with a pastry cutter or your fingers until mixture looks like coarse crumbs.
  3. Add ice water 1 tbsp at a time, mixing until the dough just comes together.
  4. Divide into 2 discs, wrap in plastic, and chill at least 1 hour (or up to 2 days).

2. Prepare the filling

  1. Peel, core, and slice the apples (¼-inch thick).
  2. Toss with sugar, flour, cinnamon, nutmeg, salt, lemon juice, and vanilla.
  3. Let sit 15–20 minutes so the apples release some juice.

3. Assemble the pie

  1. Preheat oven to 425°F (220°C).
  2. Roll out one dough disc to fit a 9-inch pie plate. Place it in the plate, letting excess hang over the edge.
  3. Fill with apple mixture and dot with butter.
  4. Roll out the second crust and lay it over the top. Trim and crimp the edges.
  5. Cut a few slits in the top for steam to escape. Brush with egg wash and sprinkle with sugar.

4. Bake

  1. Bake at 425°F (220°C) for 20 minutes, then reduce to 375°F (190°C) and bake another 35–45 minutes, until crust is golden and filling is bubbling.
  2. If the edges brown too quickly, cover with foil.
  3. Cool at least 2 hours before slicing — the filling thickens as it cools.

🧁 Tips

  • Add 1 tbsp cornstarch for a thicker filling.
  • A mix of apple varieties gives the best flavor and texture.
  • Serve warm with vanilla ice cream or cheddar cheese (New England style!).
